This is currently my favorite lunch right now! I LOVE it. It was inspired by a buffalo chicken salad I had at a bar one night. It is very simple and easy to make. You can add anything you want to it to fit your macros like shredded cheese, croutons, seasonings etc.
Chopped red leaf lettuce
Franks red hot buffalo sauce
Fat free or low fat ranch dressing
Cooked chicken breast
Cut the chicken breast into cubes. Pour 1-2 Tbsp of Franks buffalo sauce over the chicken and stir to coat. Place the chicken on top of the chopped lettuce. Pour 2 Tbsp of fat free or low fat dressing and viola! A super simple tasty lunch! Now add carbs to the side to fit your macros!
